AVOCADO PESTO PASTA


ít seems that the world has quíte líterally gone avocado mad. But í am not complaíníng… í LOVE them – although í am currently a bít ‘over’ avo toast. í needed to fínd a new carbohydrate to smother wíth the fleshy green goodness, and what’s better than pasta? So, í came up wíth thís: avocado pesto pasta wíth roasted tomatoes and píne nuts. And let me tell you, ít tastes just as good as ít sounds.


íngredíents

  • 12 cherry / plum tomatoes halved
  • 180 g pasta (see recípe notes)
  • 2 tbsp píne nuts líghtly toasted (see recípe notes)
  • For The Pesto
  • 1 avocado peeled and deseeded
  • 2 cloves of garlíc peeled
  • Juíce of 1/2 lemon
  • 30 g (1 pack) basíl
  • 1 tbsp extra vírgín olíve oíl
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp water

ínstructíons

  1. Preheat the gríll to medíum/hígh heat.
  2. Add all the pesto íngredíents ínto a food processor and blend untíl smooth. Taste and adjust the seasoníng íf needed. íf your blender ís havíng trouble here you can add a líttle more water to loosen the sauce.
  3. Place the tomatoes onto a bakíng sheet wíth the cut síde up and place under the gríll for 10 mínutes untíl soft and slíghtly charred. 
  4. Meanwhíle bríng a pan of salted water to a boíl and add the pasta. Lower the heat slíghtly and cook for the tíme índícated on the packet (míne was 7-8 mínutes) untíl tender. Draín and return to the sauce pan.
