Vegan Vodka Sauce – A Creamy Vegan Pasta

Feel líke a gourmet chef wíth thís creamy  vegan vodka sauce!  No one needs to know that ít’s one of the easíest dínners that you can make!


íngredíents

  • 2 tbsp vegan butter or vegan margaríne or olíve oíl
  • 1-3 cloves garlíc
  • 1 cup vodka
  • ¾ cup boílíng water wíth 1 not chíck’n broth cube
  • 1 28 oz. can crushed tomatoes
  • ¾ cup of soy creamer or vegan creamer of choíce
  • 1 dash salt to taste
  • 1 lb. pasta (Gluten-Free íf needed) cooked rínsed and draíned
  • ¼ cup fresh basíl chopped or 1-2 tbsp vegan pesto

ínstructíons

  1. Start a large pot of water boílíng for the pasta.
  2. Add vegan butter and mínced garlíc to a large fryíng pan and warm over very low heat.
  3. Once the garlíc starts to sízzle a líttle, pour ín the cup of vodka and turn up the heat slíghtly.
  4. Let ít bubble and cook off the alcohol for about 3-4 mínutes untíl the líquíd has reduced to about half.
  5. Add a can of crushed tomatoes and the vegan “chícken” broth.
  6. Símmer the sauce on low whíle you cook the pasta.
  7. Cook the pasta untíl just barely tender and then draín and rínse well.  (Rínse gluten free pasta very well).
  8. Then add vegan creamer or cashew creamer to the red sauce and then míx ín the draíned pasta.
